OK, I have to admit, I stole this from my wife Amanda, who stole it from her parents. Amanda makes this *almost* as good as I do. Although, you can’t really mess it up
If you live in the Seattle area, there’s no better time to fire up the grill than the summer, although I’m known to use that thing all year round. Before I tell you the awesome chicken recipe I should give some idea on what you should get before you make it, so here goes.
Step 1: Amanda and I buy all of our chicken breast in a big package from Costco about once every 2 weeks. We freeze them and they come pre-packaged with 2 breasts in a pouch. If we’re making chicken that evening, we take chicken out of the freezer before we go to work in the morning.
Step 2: I was using bamboo skewers for this recipe, but I grew pretty tired of the skewers leaving bamboo splinters in my finger and in the chicken, not to mention I always forget to soak them leaving them burned at the ends. So, I went to Wal-Mart and purchased 3 packages of metal skewers (total of 12) costing me approximately $7. The chicken slides off the skewer so much easier too.
Now for the recipe:
1. Cut your chicken breast into 1 inch cubes
2. Take 3 cloves of garlic and chop
3. Add some kosher salt and mash it into the garlic forming a garlic paste
4. Squeeze the juice of 1 lemon into a large ziploc bag
5. Add 1 tablespoon of oregano into the bag
6. Add the garlic paste into the bag
7. Add the chicken into the bag
8. Mix together in the bag and put the bag in the fridge until you’re ready
9. Put the chicken pieces onto the skewers and grill those bad boys!
We added some zucchini to this that I over cooked and they turned into baby food, but thats ok.
Also, I know, I’m not a chef and this recipe isn’t written the way a traditional one is written, but the chicken is awesome and you should try it! Good luck, and let me know how it goes.
